A love of vegetables and of great traditional and contemporary cuisine – come and enjoy a chic, modern vibe at his restaurant in the third arrondissement after work. Laurent Rigal offers a menu full of beautiful ingredients in surroundings displaying a new-style masculine décor full of clean lines and fine materials. This chef from Clermont-Ferrand, awarded a Michelin star in 2014, makes vegetarians blush with pleasure at his fully vegetarian menu. Mouths will also water at the stunning menu based around morels: morel foie gras terrine with sweet spices, rhubarb confit and sorbet, lightly roasted scallops on a purée of petits pois, morels with a creamy nut pesto sauce, fillet of broad whitefish meunière on polenta, white roasted asparagus, morels sautéed in butter and verbina, etc. There is also a touch of Lyon tradition, with pike mousseline quenelle and crayfish cream sauce, Bresse chicken and, of course, the famous pure chocolate hot madeleines.
