Lovers of Franco-Japanese cuisine can be reassured that, despite relocating to the other side of Saint-Jean cathedral, journeying through all the favours on ofer still seems like a voyage into the unknown. Tsuyoshi Arai, who has had a Michelin star since 2011 and who is a great ambassador for Franco-Japanese cuisine, enjoys ofering the unexpected with his unique menu (christened Q.E.D. for Quod erat demonstratum) that can only be experienced once you are sat at one of the 14 tables available in this tiny restaurant. It is a wonderful experience played out in a parade of refned dishes, such as the superb Breton blue lobster carpaccio, pear rosace and Pedro Ximenez mayonnaise, or the exquisite squab in Poitou-Charentes, red chicory, beetroot in raspberry vinegar, sorrel leaves and date condiment. You will be in seventh heaven
