Yohann Chapuis has celebrated his ten years at the helm of this superb establishment in Burgundy in the best possible way. The restaurant, established by Jean Ducloux in 1947, is now part of the very select ‘Relais & Châteaux’ group. It is yet another recognition of the efforts this Michelin-starred chef has made to perpetuate the establishment’s reputation for excellence, and is also an invitation for constant reinvention. Even if the food on offer (a seasonal menu showcasing gourmet delights) pays homage to the classic dishes, such as hot Grand Marnier soufflé or snail eggs cooked according to taste, the cuisine and dining room in the gourmet restaurant have been given a new look. The opening of a Burgundy- style ‘bouchon’ is also new for the spring, where you can feast on those classic regional dishes, such as snails, Bresse chicken and Charolais beef.
