Toto Li Vigni, who won an award at the Trophées de la Gastronomie’in 2015, has become Lyon’s best ambassador for Italian cuisine. And this is why! ‘I am an enthusiast,’ says this warm- hearted Italian, who has found inspiration in a former local bar in Montchat which has been transformed into a gourmet haven with a pretty interior courtyard to enjoy in fine weather. Toto showcases all his talent, using the very best transalpine ingredients in a respectful manner in surroundings of exposed white brickwork, and a red and black interior. His signature dish, ’Parmigiana revisitata’, crowned ‘best creation’ at the Cremona Gastronomy Fair in 2013 is one of the best examples of this, as is the ‘aumonière’ (pastry parcel) filled with aubergine and with a melting centre of parmigiano and mozzarella. It is a perfect way to awaken the palate, before tasting the Pappadelle di Cathy (broad pasta in a parmigiano, langoustine and nutmeg cream sauce). And then there is his Panzerotti con salsa di tartufo marinato (large ravioli in a black truffle sauce marinated in white truffle oil). Forza Toto!!
