This teaching brasserie is dedicated to sharing culinary skills and knowledge, and, since last spring has been delighting key business figures in the Gorge de Loup ZAC (joint development zone), as well as many others. Here, in the heart of Vaise, future talent comes to learn both in the classroom and in the kitchen, The two men in charge are determined to make the experiment work. The eclectic Dominique Moreaud, tenacious in his desire to teach about taste, has left ‘Tout le monde à table’ (his previous restaurant) so that he can join forces with his old partner in crime of 30 years, Christian Lavault (former chef at the ‘Hostellerie le Saint- Laurent) in order to open this ABCR training centre to those interested in flavoursome brasserie-style cuisine.
