
Florence Périer, drawing from her vast experience of traditional Lyon-style cuisine and ably supported by her son Maxime, knows the tastes and expectations of her customers in her bistro in ‘Les Brotteaux’ very well. She seeks out and enjoys cuisine which involves limited food miles, relying largely on local produce and recipes which are ‘typical of the region’., home-made herring terrine and potatoes in vinaigrette, sautéed pork cheek with chestnuts and a slice of crisp calf’s head with sauce gribiche, Lyon-style andouillette gratin, lamb brains meunière and to finish, a praline Diplomate. The cuisine is faultless and hearty, right down to the attractive wine list suggesting 500 craft wines. You can follow the bold , yet good advice to buy some to take away -simply put as ‘you enjoyed your glass, so take a bottle home’!
