In the gardens, the hundred-year-old sequoia and rhododendrons mix with the aromatic herbs grown by the chef. Eric Lambolez is the guardian and spirit of place and offers a market based, seasonal cuisine. He uses what he has learnt during his working life in the great hotels and famous châteaus to great effect. The menu is fresh and simple, so that the flavour of the lobster, pigeon, red mullet and golden sweetbreads in a pastry-sealed pot can be enjoyed at their very best.
