This former chef of the ‘Verre et de l’Assiette’ in Vaise, who trained at ‘Le Bec’, ‘Zuddas’ and ‘Têtedoie,’ offers a semi-gourmet menu which sings with finely prepared seasonal produce served, where necessary, with a touch of flamboyance. The chef’s skill at playing with flavour is illustrated by the shredded lobster, celeriac and crab meat with crushed cocoa beans, carrot and coffee mash and porcini mushroom crisp. The magic is continued in the dining area where his wife, Maryline, offers a wine list with over 200 suggestions.
