Having enjoyed an excellent training with Michel Guérard and Alain Chapel, the chef has been delighting guests in his renowned family restaurant for the past 25 years. He promotes a love of superb ingredients presented in dishes in a truly appealing manner. People come from far and wide to enjoy (with their eyes at first) the chef’s iconic dishes, from blue lobster ‘in homage to my father’ with a fish stock jus to Kaviari caviar or smoked haddock and potatoes, before climbing the stairs in this establishment to enjoy a night’s sleep which is just as good as its food.
