We returned willingly to Tarentaise, at the foot of the Trois Vallées slopes, to review its second Michelin star. The two Michelin stars which have been awarded to this high point in fine dining since 1984 recognise the establishment’s exceptional surroundings, as well as the talent of the people who work there. The warmth of the beautifully decorated dining area, the appeal of which was rejuvenated over the summer, results in the cosy, warm and friendly atmosphere which presides over the whole restaurant. In the kitchens, Stéphane Buron oversees a cuisine whose reputation extends far beyond the borders. Its creative, hearty and sophisticated nature is revealed in elegant, subtle dishes whose presentation beautifully showcases the aroma and flavour of the local ingredients. The leek in truffle vinaigrette, mountain pork belly and small ‘Mont Blanc’ style macaroons with chestnuts are, quite simply, the pinnacle of fine dining. ‘Simplicity lies in the art of perfection’ as the chef is fond of saying…
