The chef, Alain Brunot, performs his culinary skills here with rigour and passion to create a creative and sophisticated cuisine which is full of flavour. This is supported by an excellent wine list. The poached egg, siphon-whipped Charlotte potato with truffle oil and Périgueux sauce; haddock, Romanesco broccoli foam, hazelnut shards and seared leeks, and vanilla mille-feuille with a Suzette sauce give a good overview of a packed menu.
