Not all stars in the heart of Courchevel are racing down the slopes. Those awarded to the modest but oh so talented Jean-Rémi Caillon can be savoured during some time spent comfortably ensconced in the dining area of Kintessence, the cosy restaurant at the K2 Palace. The chef from the Roanne area, supported by the pastry chef, Sébastien Vauxion draws his inspiration from the mountain region to create a cuisine full of surprises and perfect for getting to know the peaks better. This is illustrated by his famous Forezan beetroot with smoked eels, which takes the lead in front of the flavoursome blue lobster with potatoes and spruce tips or the tender Tarentaise lamb with agastache. The stunning coconut mushroom for dessert completes this wonderful climb to the upper echelons of taste.
