Brought up in the Loire, this Michelin-starred chef from Saint-Just-Saint-Rambert now performs his feats in his gourmet ‘studio’ in the sixth arrondissement in Lyon. The fundamental conviction that all taste begins with the eyes applies to the dining area as well as the dishes. The well thought-out contemporary décor created largely from natural materials is echoed in the meticulous presentation which aesthetically enhances the ingredients. Some of the sensory wonders on the 2007 Meilleur Ouvrier de France award winner’s menu are lightly cooked Scottish salmon crostini, ‘Blackmore’ Wagyu beef cooked on a wood fire and sweet delights such as an original Weiss chocolate dome and Piedmont hazelnuts.
