Sébastien Bouillet traindes with the very best (from Patrick Chevallot in Val d’Isère to Gérard Mulot in Paris), before joining the family patisserie in 2000. He has infused it with his dynamic, enthusiastic vision which is open to the world and which epitomizes the new generation of sugary delights. This craftsman, it must be said, is gifted, good at communicating and mischievous at times. His specialities are apprciated from the hilltop in the Croix-Rousse to Japans, with three themed shops called “Pâtisserie”, “Gouter” and “Chokola”, with its famous chocolate waterfall and veritable library of chocolate bars. Anyone who has not tasted “Saint Ho !”, Baba or his macaroons in unique flavours , cannot call themselves a true gourmet of Lyon! The “gateau-école” patisserie courses, where Sébastien provides tips and good recipes, are without doubt the best way to appreciate all the sparkling brilliance of this man.
